Hugo’s is Selective About Our Meat
When you dive into a steak at Hugo’s, you won’t be eating a piece of meat that came from the local grocery store or has been sitting in the freezer for months. Instead, you’ll be enjoying fresh meat that was carefully selected from a list of sustainable farms in Minnesota and North Dakota that specifically breed Black Angus. The cattle is raised, fed, and processed according to Gibsons very strict specifications.
Hugo’s Uses USDA Gibsons Prime Angus certified beef
The USDA grades beef through a complex inspection where they evaluate the amount of fat marbling in the ribeye muscle and the age of the beef carcass. Since the fat marbling is what determines the juiciness, tenderness, and flavor and the age is what dictates texture, the higher the ratio of the marbling and the younger the beef, the higher the grade awarded.
The top grade for tenderness, juiciness, flavor, and texture is known as USDA Prime. Believe it or not, Hugo’s Frog Bar & Chop House, which is a member of the Gibsons Restaurant Group, is the first restaurant group in the country to be awarded its own USDA Prime Certification.
Hugo’s Does Not Believe in Flash Freezing
The truth is that most restaurants use flash freezing and freeze their foods at low temperatures to prevent losing moisture in the foods when they thaw. While there is nothing wrong with this, it does not allow restaurants to serve their customers with the highest quality food they deserve.
At Hugo’s Frog Bar & Chop House, we don’t believe in flash freezing and ensure that every steak on our menu is delivered fresh. You’ll be able to taste the freshness from the moment you place a piece of our meat in your mouth.
Hugo’s Steaks Are Aged for 40 Days
We only serve beef that has been aged for 40 days in order to provide our customers with maximum flavor and tenderness. In addition, we rub each steak with olive oil and Gibson’s specialty salt. Then, we cook it in an 1800° Fahrenheit infrared broiler to ensure the ideal char.
What Types of Steaks Does Hugo’s Offer?
Each and every steak found on Hugo’s menu delivers incredible juiciness and flavor. Our most popular steak, which is a 16 oz bone-in filet mignon is known as the Philly Cut. If you’re hungry and looking to treat yourself, the Philly Cut is the way to go.
In addition to the Philly Cut, we serve the 22 oz W.R.’s Chicago Cut, the 8 oz and 12 oz Filet Mignon, the 20 oz T-Bone, the 16 oz New York Sirloin, and the 26 oz or 48 oz Porterhouse. You are sure to be in heaven once any of these mouthwatering steaks hit your mouth.
