How the USDA Grades Beef

The USDA’s grading system involves a complex inspection, which evaluates the amount of fat marbling in the ribeye muscle and combines the age of the beef carcass. Out of all of the beef produced in the United States, less than 2% of it is certified as USDA Prime.
